Healthy Cooking: Chicken Rotini with Roma Tomato Sauce

So I filmed my first cooking video, which will be a regular segment on my channel in an effort to promote eating healthier and just living a healthier lifestyle overall! I have been on this journey for a couple of years,  but like many, with all the temptation (especially good food!), it can be difficult to stay on track with eating healthy.

I invite you guys to join me on this journey of living a healthier lifestyle by eating right and working out hard! I think it will be fun to start a community among ourselves to build up confidence, to empower each other, and just to exchange work out and eating tips!

Here is the first recipe that will be featured in my video that I will upload tonight from "The Eat-Clean Diet Cookbook" by Tosca Reno:

Ingredients:

6 lean chicken breasts, boneless and skinless or if vegetarian, use tofu, cut 1" cubes
1 Tbsp/15ml extra virgin olive oil
1 large onion, peeled and chopped
1 large carrot, peeled and chopped
2 ribs celery, including leafy greens, chopped
1/2 / 120ml fresh basil, chopped
2 tsp / 10ml dried oregano leaves
4 cloves garlic, passed through a garlic press
8 Roma Tomatoes, chopped
1 medium sweet potato, baked
1/4 cup / 60ml low-sodium chicken or vegetable broth (gluten free if necessary)
1 x 10 oz / 280g package brown-rice rotini pasta

Preparation:

1. Cut chicken breasts into thin strips

2. In a large skillet, heat olive oil over medium heat.  Add onion, carrots and celery and cook until they become soft but not brown.  Add herbs and garlic and continue cooking for 2 to 3 minutes.  Add chopped Roma tomatoes and sweet potato pulp along with 1/4 cup / 60ml chicken broth.  Add chicken strips and increase heat until mixture comes to full boil.  Reduce heat and cover tightly.  Let simmer for 20 minutes.

3. Meanwhile, in a large saucepan bring 6 quarts/5.7 L water to a full boil.  Add a pinch of salt and a splash of olive oil to the water to prevent pasta from sticking.  Add pasta and cook al dente.  Drain and return to the pot.

4. Add tomato mixture to pasta and mix until all ingredients are combined.  transfer to heated decorative serving bowl and serve.
6 servings | 10 minutes prep time | 45 minutes cook time
